Orange-fleshed sweet potatoes may be one of nature's
unsurpassed sources of beta-carotene. Several recent studies have shown the
superior ability of sweet potatoes to raise our blood levels of vitamin A. It's
important to have some fat in your sweet potato-containing meals if you want to
enjoy the full beta-carotene benefits of this root vegetable.
Sweet potatoes are also rich in vitamins C and E. These are
potent antioxidant vitamins that play an important role in disease prevention
and longevity. Both vitamins also play a huge role in the health and beauty of
your skin and hair, making them popular supplements. The combination of
beta-carotene, vitamin E and vitamin C in one food makes the sweet potato one
heck of a "beauty food". These nutrients all contribute to a healthy,
glowing complexion and vibrant hair.
