Beetroot, also known simply as the beet, has been gaining in
popularity as a new super food due to recent studies claiming that beets and
beetroot juice can improve athletic performance, lower blood pressure and
increase blood flow.
Traditionally, beets are valued for their support in
detoxification and helping to purify your blood and your liver. Drinking
beetroot juice increases blood flow to the brain in older people, which may be
able to fight the progression of dementia, a 2010 study suggested.
Beet root raita is a yummy accompaniment for steamed rice or
chapatti, and it is easy and fast to prepare.
Ingredients:
Beet root - 1
medium size
Yoghurt - 2
cups
Oil - 1 tbsp
Mustard seeds- ½ TSP
Salt to taste
Red chilli powder -
¼ tsp
Method:

Peel, wash and grate the beet root.

Heat oil in a pan, add mustard seeds. When they
splutter, add the grated beet root and lower the flame.

Keep stirring and let it cook for about 3,4
minutes.

Add the red chilli powder, mix well and remove
from fire.

When it is cooled, add to the beaten yoghurt.

Add salt to taste and it is ready to be served.
