Suran ( yam) curry

We got a Suran from our garden. I made Kerala preparation (Chena puzhukku) one day, there was left over Suran. Wanted to make a different preparation, and was successful!

Ingredients

2 cups skinned and cubed Suran

1 tsp oil

¼ tsp mustard seeds

A few curry leaves

1 big onion sliced

1 big tomato cubed

1/3 tsp turmeric powder

¼ tsp red chilli powder

1tsp coriander powder

Salt to taste

3 cups water

Instruction

-          Pour some water over the cubed Suran, add salt, mix and leave for ten minutes. Drain and wash again twice.

-          Add one and a half cups of water, salt and pressure cook for 5 minutes.

-          Meanwhile, grind the sliced onion and cubed tomato.

-          Heat oil in a Kadai, add mustard seeds. When they splutter, add curry leaves and the ground onion and tomato. Keep the fire low and stir in between till it starts separating from the sides.

-          Add the masala powders and the cooked Suran. Add the remaining water, stir well and simmer for 5 minutes.

-          It is ready to be served with chapati or rice.
