Coconut pulao

This is a comfort food for me, very soothing and easy to prepare. It can be served with pickle , papad and curds.



Ingredients:


1 cup rice
2 cups water
1 cup grated coconut
Salt to taste
2 tbsps ghee or oil
1 ½ tsps sesame seeds
1 piece cinnamon
2 cloves
2 cardamoms
1 bay leaf

Instruction:


-        -  Wash the rice, add water and soak for about ten minutes. Add salt to the rice and put it on high flame, when it starts boiling, reduce the flame and note the time.

-        -  Heat ghee in a thick bottomed pan, add sesame seeds, bay leaf, cinnamon, cloves, cardamom, and grated coconut. Keep stirring till the coconut turns light brown.



-       -  Add this to the rice five minutes after it started boiling. It will need five to seven minutes more of cooking depending on the type of rice. 

-        -  Remove from fire, cover and let it sit for at least ten minutes before serving.
        Garnish with fried cashews while serving.
