This is awesome quickie which can be eaten as it is or as an
accompaniment for rice or chapatis.
Ingredients:
Brinjal - 2 medium
size
Oil - 1 tbsp
Salt to taste
Pepper powder -
¼ tsp
Roasted ground nuts -
2 tbsps
Method:
-
Wash, dry and cut brinjals into small cubes.

Heat oil in a pan and add the cut brinjals.

Keep stirring in between and add salt. When they
become soft, add the roasted ground nuts and keep on low flame till the brinjal
is cooked..
-
Sprinkle pepper powder, stir and remove from the
fire.
