Brinjal stirfry


This is awesome quickie which can be eaten as it is or as an accompaniment for rice or chapatis.

Ingredients:

Brinjal  - 2 medium size
Oil        - 1 tbsp
Salt to taste
Pepper powder            - ¼ tsp
Roasted ground nuts     - 2 tbsps



Method:

-         Wash, dry and cut brinjals into small cubes.
-         Heat oil in a pan and add the cut brinjals.
-         Keep stirring in between and add salt. When they become soft, add the roasted ground nuts and keep on low flame till the brinjal is cooked..

-         Sprinkle pepper powder, stir and remove from the fire.
